Latino Thanksgiving: pumpkin flan

Alas, it’s Pavo time and requests are in for My Latino Voice’s favorite Thanksgiving recipe, Pumpkin Flan. Get your ingredients together and go out and buy that pressure cooker that you are so afraid of (there’s no need for concern if you monitor it….’can’t leave pots on an active stove unattended for long, pressure or no pressure!).

Ok, so this is NOT the least time consuming thing to make and you DO need that pressure cooker (yeah…your grandma’s “olla de presion.”). Weird thing is you’ll also need a can of Pilon, Bustelo or some such coffee. Nope, the recipe has no coffee but I use the can to make the flan.  Oy vey!

Ingredients:

For Flan:

  • 2 cups white/regular Sugar (to coat the can inside…you’ll see how in a minute…makes the caramel)
  • 1/2 cup water
  • 1 Can of Magnolia sweet condensed milk (Magnolia is best, Eagle next best)
  • About 1 cup whole milk
  • 6 egg yolks
  • 1 teaspoon vanilla

Pumpkin mix (see below):

  • 1 small can Libby’s already cooked Pumpkin filling (you’ll only use about half of that.
  • 1 tablespoon Brown Sugar
  • Cinnamon, cloves, nutmeg and allspice to taste
